Ingredients: (serves 2)
Carte D’Or Spagnola
2 thick slices brioche
Softened butter, for spreading
2 tbsp cherry liqueur or Marsala
4 tbsp cherry conserve
4 tbsp blackcurrant or strawberry coulis
Preparation
- Toast the slices of brioche on one side only. Spread the untoasted side with butter.
- Sprinkle 1 tbsp of cherry liqueur or Marsala on each piece of buttered brioche and let it soak in. Toast until lightly browned.
- Spread the brioche with half the cherry conserve, slice into triangles and share between two bowls or plates.
- Warm the remaining conserve with the coulis.
- Top the brioche with scoops of Carte D’Or Spagnola, spoon the coulis mixture on top and serve at once.
